(I am from SoCal, and can only eat so much Dal and roti!!) but I had it already so I figured why not?

I made this for a neighborhood cookout today and it was very popular. With all the chopping this recipe entails, it’s a great opportunity to pull the whole family into the kitchen to work together. Serve cold topped with chopped peanuts, black sesame seeds, and sriracha to taste. Combine all the dressing ingredients in a bowl, whisking until no clumps remain and it can easily be poured. Thanks! My boyfriend and I ate it for leftovers with some peanut-sauced chicken. Dee-licious! This is so colourful and would tempt the most fussy of eaters to at least try it. 2 tablespoons lime juice. Try Pepitas (seasoned toasted Pumpkin Seeds) as a substitute for a nutty crunch. Whisk until well combined. I made this last weekend for a 4th of July gathering and it was a hit! I love the versatility of this recipe; you can use more carrots & less cabbage or you can use broccoli slaw mix instead of cabbage or, you can add some julienned jicama. The great thing about the recipe is that it makes use of all the prepared vegetables available at the supermarket today, like shredded coleslaw, grated carrots, and shelled edamame. I added a chicken breast boiled and shredded for a complete meal, and used slivered almonds cos i didnt have peanuts!

Thank you. It’s super easy to make, healthy, fast, and you can do all the prep work in advance then pour the dressing in whenever you’re ready to serve. Is it as good with the veggie oil? Very tasty & super easy to make. This one is a keeper!! I’m not the biggest fan of scallions so I typically keep them in a small bowl on the side along with extra cilantro (which I love). I did add 3/4 c. Snow peas (sliced in thirds) and left out the edamame because this is what I had on hand… served with shredded grilled chicken (marinaded with small amount of left over dressing) DELICIOUS! This is one of those salad recipes that makes a great meal in itself. I heated the milk, melted the chips in a double boiler, and then carefully blended everything with the tofu before pouring the filling into little red cups and plunking a popsicle stick in the middle as they started to firm up in the freezer.
